The best way to store fresh biltong
If you’re anything like us, there’s no such thing as leftover biltong. Can you imagine leaving this wonderfully moreish snack lying around for so long that it goes bad?
Those of you who have the willpower to not finish an entire bag in one sitting might be wondering what’s the best way to store your biltong (hint: one possible method is “in your stomach”).
Although biltong is a preserved product, it’s still a natural food substance therefore it can go off.
Here are a few tips to ensure your biltong stays super fresh and flavorful so you can enjoy every last delicious morsel.
How long does biltong last?
Biltong is best consumed fresh, but once the pack seal is opened it can last for 4 to 6 days before developing mould if stored correctly, otherwise we advise to consume within 1-2 days from opening.
Wet biltong is the preferred choice for many due to its soft texture, but there is a downside to this: the wetter you like your biltong, the quicker it could spoil because of the high moisture content.
Dry sticks of biltong not only keep longer than wet slices but are also easier to store and have an extended shelf life.
If you’re comfortable with carving meat, a slab of biltong may be the best choice for you as it usually lasts longer than slices.
Tips for storing biltong
- Keep biltong sealed in its packaging until you want to eat it: be sure to check the best before date.
- Never store biltong in a sealed container or plastic bag: moisture can get trapped and cause it to start developing mould quickly. A paper bag is the best option because it absorbs moisture, as well as allowing air in, hereby keeping your biltong drier for longer.
- Keep in a dry, cool area: Just like any meat product, biltong needs to be stored at a low temperature out of direct sunlight to prevent bacteria from growing. This could be in an open container covered with a paper towel on the counter, in a brown paper bag in your kitchen cupboard or even in the fridge.
- Mix the biltong every day: this enables the air to circulate so the biltong can breathe. While you’re stirring, grab a few pieces to snack on!
- Store whole pieces instead of slices: A large uncut piece keeps the moisture and flavour locked in. Simply cut as needed when the craving for freshly sliced biltong hits.
- Remember: biltong’s biggest enemies are heat, moisture and oxygen!
Can biltong be frozen?
You can freeze biltong for up to 6 months, but we do not recommend doing this as it may change the texture.
While storing biltong in the freezer will increase its shelf life, bear in mind that meat releases more moisture once it has been defrosted.
If you choose to freeze your biltong, store it in an airtight container or vacuum bag. Be sure to defrost it in a well-ventilated and dry atmosphere. You can use a paper towel to dab the meat and remove any moisture.
The perfect solution to storage problems
Our long-life snack bags have a shelf of 60 days as long as they remained sealed. Ideal for packed lunches, taking on your travels or just stocking the cupboard for that sudden craving.
This product is made in the same way as our traditional biltong. The only difference is that it’s slightly on the drier side and packaged in a protective environment to enable a longer shelf life.
Please note that once opened, the biltong should be consumed within 2 days (if you can wait that long!).
